- 2 pounds of ground meat (minced meat)
- 2 ground chorizos
- 1 cup of crushed cookies or breadcrumbs
- 2 eggs
- 1 onion cut into brunoise (small dice)
- 1 green bell pepper
- 2 boiled eggs
- Salt, pepper, complete seasoning, cumin, and parsley, to taste.
- Olives and raisins
In a large bowl, mix the ground meat and the sausages. Add the chopped onion and pepper. Mix them well and incorporate the dry seasonings to taste (salt, pepper, complete seasoning, cumin, and parsley). Add the olives, raisins, and two beaten eggs.
Mix well and when you have the ingredients well combined, gradually add the crushed cookie to achieve the ideal consistency. The dough should be compact but not too hard.
Place the dough on aluminum foil and shape it into a cylinder. Try to make it well compact to prevent it from breaking while cooking. Cover it with ketchup, seal the aluminum foil, and place it in the oven for about 30 minutes at around 350 ºF (180ºC).
You can serve it hot or cold. It can be paired with various side dishes, roasted potatoes, rice, salad. But it can also be eaten with bread, with crackers, or as cold meat to accompany a Cuban beer.
