Ingredients
- 1 cucharada de butter
- 2 tablespoons of wheat flour
- 2 ½ cups of milk (you can add a little cooking cream)
- 4 onzas de cheese
- salt
- pepper
- nutmeg
Instructions
Combine the butter with the flour and cook over low heat until it starts to turn a golden color. Gradually add the milk until a thick cream is formed. Once the ingredients are well integrated, let it cook for a couple of minutes and add the cheese. Keep stirring to prevent it from sticking to the bottom or forming lumps.
When the cheese has melted into the cream, adjust the salt to your taste.
Do not add the salt beforehand, as some cheeses have a very strong flavor and can alter the taste of the recipe. Add the pepper and nutmeg.
Remember that one of the tricks of this recipe is cooking over low or medium heat. Don't worry, it will reach the right consistency! If you notice it thickening too much, you can add water or broth to achieve your desired consistency.
