Ingredients:
- 1 tablespoon of butter
- 2 tablespoons of wheat flour
- 2 ½ cups of milk (you can add a bit of cooking cream)
- 4 ounces of cheese
- The translation of "sal" to English is "salt."
- The translation of "pimienta" in English is "pepper."

Instructions:
Combine the butter with the flour and cook over low heat until it starts to turn a golden color. Gradually add the milk until you achieve a thick cream. Once the ingredients are well blended, allow it to cook for a couple of minutes, then add the cheese. Keep stirring to prevent it from sticking to the bottom or forming lumps. When the cheese has melted into the cream, adjust the salt to your taste. Avoid adding salt too early, as some cheeses have a strong flavor that can alter the taste of the dish. Add pepper and nutmeg.
Remember, one of the keys to this recipe is to keep the heat low or medium. Don’t worry; it will reach the right consistency! If you notice it thickening too much, you can add water or broth to achieve your preferred texture.
