An exquisite recipe that has corn as the protagonist.
Ingredients:
- ½ pound of ham
- ½ pound pork, diced
- 3 tablespoons of oil
- 1 onion
- 1 large chili
- 3 garlic cloves
- ½ cup tomato sauce
- 1 chorizo
- 2 tablespoons of dry wine
- 1 cdta de vinagre
- 1 cdta de sal
- 1 pinch of pepper
- 2 cups of water
- 1 cup diced potatoes
- 1 cup of pumpkin, chopped into squares
- 2 packages of frozen corn (2 cups) or 4 ears of sweet corn.
Instructions:
Cut the ham, chorizo and pork into medium pieces. Sauté the meats in oil with the onion, chili and chopped garlic. Add the tomato sauce, salt, pepper, water and potatoes. When the potatoes begin to soften, add the pumpkin and corn. If using corn on the cob, cut them into thin rounds or shell them. Cover the preparation and let the stew cook over low heat until all the ingredients are ready. Be careful not to let it dry out too much, this is a juicy dish. Enjoy your meal!!!
