Pea fritters

Note

A simple, economical, quick, and very nutritious recipe, thanks to the high amount of plant protein found in peas. This protein is of high quality, easily digestible, and absorbable by the body. Additionally, peas are a rich source of iron, essential for the production of red blood cells and for maintaining a healthy immune system.

Ingredients

  1. 250 g of dried peas (not green).
  2. 2 large cloves of garlic.
  3. 1 egg.
  4. 40 g de perejil fresco (opcional).
  5. 1 small onion.
  6. Salt to taste.
  7. Pepper to taste.
  8. Frying oil.
  9. (Optional) A few tablespoons of cornstarch to adjust the consistency.

Instructions

Preparation:

Hydrate the peas:

  1. Soak them in water from the night before or for at least 5 hours.
  2. Escurre bien el agua antes de utilizarlos.

Prepare the mixture:

  1. In a blender, add the soaked peas, onion, garlic, and a splash of water to facilitate the blending.
  2. While blending, gradually add the egg.
  3. Adjust the salt at the end, tasting the mixture to balance the flavors.
  4. If the batter is too runny, add cornstarch until you achieve the right consistency for frying.

Integrating flavors:

  1. Add salt and pepper to the blender mixture and blend again to mix well.
  2. Pour the mixture into a bowl.
  3. Add the chopped fresh parsley and gently mix with a wooden spoon. (Do not blend it to avoid turning the entire mixture green).

Frying the fritters:

  1. Heat a generous amount of oil in a frying pan.
  2. Using a spoon, shape the fritters and drop them into the hot oil.
  3. Fry them until they are golden brown on both sides.
  4. Remove the fried items and drain them on paper towels to eliminate excess oil.

Serve them hot and enjoy! These fritters are perfect as an appetizer, side dish, or even as a main alternative in your meal
