Ingredients
- 1 very ripe plantain
- 3 eggs
- 1 pinch of salt (to taste)
- Olive oil
- Frying oil
Instructions
Preparation:
- Prepare the bananas:
- Peel the banana and cut it into thick slices
Fry the plantains:
- Heat enough oil in a pan over medium-high heat.
- Fry the slices until they are golden brown on both sides.
- Remove them and place them on absorbent paper to eliminate the excess grease.
Prepare the mixture:
- Beat the eggs in a bowl with a pinch of salt.
- Add the fried plantains and mix well. Do not mash or cut the plantains.
Cooking the tortilla:
- Lightly grease a frying pan with olive oil and heat it over medium heat.
- Pour the mixture and cook until the edges begin to pull away.
- Use a plate to flip it over and cook until golden brown on both sides.
To serve:
- Remove from heat and serve hot.
- Serve with a fresh salad or enjoy on its own.
