Fried ripe plantain tortilla

Ingredients

  1. 1 very ripe plantain
  2. 3 eggs
  3. 1 pinch of salt (to taste)
  4. Olive oil
  5. Frying oil

Instructions

Preparation:

  • Prepare the bananas:
  • Peel the banana and cut it into thick slices

Fry the plantains:

  • Heat enough oil in a pan over medium-high heat.
  • Fry the slices until they are golden brown on both sides.
  • Remove them and place them on absorbent paper to eliminate the excess grease.

Prepare the mixture:

  • Beat the eggs in a bowl with a pinch of salt.
  • Add the fried plantains and mix well. Do not mash or cut the plantains.

Cooking the tortilla:

  • Lightly grease a frying pan with olive oil and heat it over medium heat.
  • Pour the mixture and cook until the edges begin to pull away.
  • Use a plate to flip it over and cook until golden brown on both sides.

To serve:

  • Remove from heat and serve hot.
  • Serve with a fresh salad or enjoy on its own.
