Yellow rice is a common dish in Cuban cuisine. It is made with various ingredients, notably chicken or pork. The recipe is simple and very convenient for when you have guests over for lunch and need to stretch your protein. It is typically served with fried plantains, tostones, tomato or avocado salads, and, whenever possible, a nice cold beer. This chef's version is delicious. Ingredients:
  • 1 cup of rice
  • 200 gramos de carne de puerco cortada en dados
  • 1 chorizo
  • 1 onion
  • 2 cloves of garlic
  • ½ red bell pepper
  • 1 cup of boiled vegetables
  • Salt and pepper to taste
  • 1 cup of chicken broth
  • 1 beer
  • 2 tablespoons of oil or lard
Instructions:

Season the pork with salt and pepper, and slice the chorizo into rounds. In a deep pot suitable for cooking rice, heat the oil or lard. Add the meat and chorizo, mix them together, and cook over medium heat until the meat starts to change color.

Add the onion and bell pepper, diced finely. Also incorporate the crushed garlic. Stir well and continue cooking over medium heat for a few minutes. Add the broth, cover the pot, and let it boil for 10 minutes.

Add the rice and stir well to combine all the ingredients. Let it cook for 5 minutes without stirring, then add the boiled vegetables. Cover the pot and allow the rice to cook as usual.

Once the rice has absorbed the broth, without stirring, add 1 beer. Cover again and cook for about 5 more minutes. Stir the rice and check the doneness and seasoning.
