Yellow rice with pork and chorizo

Yellow rice is a very common preparation in Cuban food. It is prepared with various ingredients, among which chicken or pork stand out. It is a simple recipe and very useful if you have guests for lunch and little protein. It is usually accompanied with fried plantains, tostones, tomato or avocado salads and, whenever possible, a cold beer. This chef's proposal is delicious. Ingredients:
  • 1 cup of rice
  • 200 grams of pork cut into cubes
  • 1 chorizo
  • 1 onion
  • 2 cloves of garlic
  • ½ red pepper chili
  • 1 cup of boiled vegetables
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 beer
  • 2 tablespoons oil or lard
Instructions:

Season the pork with salt and pepper and cut the chorizo into rounds. In a deep saucepan, suitable for making rice, heat the oil or lard. Add the meat and chorizo, mix and cook over medium heat until the meat begins to change color.

Add the onion and chili pepper cut into brunoise. Also add the crushed garlic. Stir well and continue cooking over medium heat for a few minutes. Add the broth, cover the pot and boil for 10 minutes.

Add the rice and stir well so that all the elements are integrated. Let it cook for 5 minutes and, without stirring, add the boiled vegetables. Cover the casserole and let the rice continue cooking as usual.

Once the rice absorbs the broth, without stirring it, add 1 beer. Cover again and cook for approximately 5 more minutes. Stir the rice and check the doneness and salt.
