- 1 cup of rice
- 200 grams of pork cut into cubes
- 1 chorizo
- 1 onion
- 2 cloves of garlic
- ½ red bell pepper
- 1 cup of boiled vegetables
- Salt and pepper to taste
- 1 cup of chicken broth
- 1 beer
- 2 tablespoons of oil or lard
Season the pork and cut the chorizo into rounds. In a deep pot suitable for making rice, heat the oil or lard. Add the meat and chorizo, mix them together, and cook over medium heat until the meat starts to change color.
Add the onion and bell pepper cut into brunoise. Also incorporate the crushed garlic. Stir well and continue cooking over medium heat for a few minutes. Add the broth, cover the pot, and let it boil for 10 minutes.
Incorporate the rice and stir well to combine all the elements. Let it cook for 5 minutes without stirring, then add the boiled vegetables. Cover the pot and let the rice continue cooking as usual.
Once the rice absorbs the broth, without stirring it, add 1 beer. Cover again and cook for approximately 5 more minutes. Stir the rice and check the cooking level and the salt.
