Note:
Fried Rice is a very popular leftover dish in Cuba. There are different recipes and generally, it is prepared using a wok, which is a type of deep and wide pan where you can mix many ingredients. This dish comes to us Cubans as a heritage from Chinese emigrants. It is said that the use of the wok dates back about 2000 years in Chinese culture. Fried rice dishes have been made since then and became popular because they were tasty, nutritious, and quick to prepare. To make perfect Fried Rice, there are five infallible elements: finely julienned vegetables, different deboned and chopped meats in small pieces, previously cooked rice, a wok of appropriate size for the amount of food you will prepare, and high heat. If you meet these requirements, I assure you that you will have fried rice with the color, flavor, and textures of gourmet level. In Cuba, the most known of the fried rice dishes is Arroz Frito, and it differs from the others because it contains some mandatory ingredients such as bean sprouts, which in Cuba we know as frijolitos chinos, and shrimp. We hope you enjoy this recipe, which, although it seems complex due to the variety of ingredients, is delicious and easy to make.

Three minutes later, when the turkey meat begins to turn white, add the sweet ham, the serrano ham, the carrot, the bell pepper, the chili, and the celery. Stir and sauté the ingredients in the wok again. Three minutes later, add the onion cut into fine julienne slices.

Without stopping to stir so the heat is distributed evenly, start incorporating the cooked white rice. Mix well. Add the soy sauce and continue sautéing the ingredients in the wok. Once well integrated, check the salt level. Soy sauce tends to be very salty, so we recommend not adding salt to the dish up to this point.

To finish, incorporate the finely chopped chives, mix, and let the rice rest for a couple of minutes. Sauté it one last time and serve it freshly made.
