- 3 pork steaks
- 1 sour orange
- 3 cloves of garlic
- 2 medium onions
- 3 tablespoons of oil
- salt, oregano, and pepper to taste
Pound the pork steaks.
This step is important because pork has a lot of fat, and the steak will curl up if it is not tenderized beforehand.
Sprinkle salt, pepper, and oregano to taste. Remember to do this on both sides of the piece of meat.
In the mortar, crush the garlic. A trick to prevent the garlic from jumping out is to sprinkle a little salt on the cloves before you start grinding. Once they are crushed, rub them onto the pieces of meat. Add the sour orange (or lemon), being careful to avoid any seeds, as they can be unpleasant to chew and give a bitterness to the meat.
Let the meat marinate in this marinade for about 30 minutes.
Place the pan over medium heat with oil for frying. Add the meat along with the marinade. Cover it so that it cooks in its own juices, turning it occasionally to brown on both sides.
While it cooks, finely chop the parsley and slice the onion into thin strips. Add them when you notice that the meat is starting to reach your desired level of doneness.
Uncover it and let it reduce a bit until all the ingredients are golden.
