Sweet potatoes are plants from tropical and subtropical regions. There are different varieties, such as Yellow, White and Red sweet potato, which owes its name to its skin color. The mass of the latter is between white and intense yellow. It is one of the sweetest varieties and is used in the cuisine of many Latin American, European, and even Asian countries.
To make the fried sweet potatoes, peel the sweet potato and cut it into rounds approximately 2 centimeters thick. Then cut them into bars, or dice as you prefer. Preheat the butter or oil over medium heat. Let them cook for a few minutes, turning them to check for even browning.
A little before they acquire the color and consistency you like, raise the heat and give them a burst of heat for approximately 2 minutes, so that they finish browning and becoming crispy. Drain them on absorbent paper. Serve hot, freshly made.
