Fried sweet potato is a traditional Cuban dish. It is consumed throughout the country, both in the city and in rural areas. It is one of the most elaborate side dishes because it is a product with affordable prices, although it is becoming more and more expensive. In recent years, sweet potatoes have made a leap into professional cuisine and appear as the protagonist of interesting dishes by great chefs.
Ingredients:
1 large sweet potato 1 cup oil or lard

Sweet potatoes are plants from tropical and subtropical regions. There are different varieties, such as Yellow, White and Red sweet potato, which owes its name to its skin color. The mass of the latter is between white and intense yellow. It is one of the sweetest varieties and is used in the cuisine of many Latin American, European, and even Asian countries.

To make the fried sweet potatoes, peel the sweet potato and cut it into rounds approximately 2 centimeters thick. Then cut them into bars, or dice as you prefer. Preheat the butter or oil over medium heat. Let them cook for a few minutes, turning them to check for even browning.

Fried sweet potatoes on absorbent paper / CiberCuba Cocina

A little before they acquire the color and consistency you like, raise the heat and give them a burst of heat for approximately 2 minutes, so that they finish browning and becoming crispy. Drain them on absorbent paper. Serve hot, freshly made.
