Ingredients:
½ kg black beans
1 cup of oil
12 tomatoes
8 chili peppers
2 onions
2 cloves of garlic
2 tablespoons of vinegar
1 bay leaf
½ teaspoon roasted food
1 teaspoon baking soda
1 pinch of sugar
salt to taste
Instructions:
Boil the beans in a liter of water, with the bay leaf, the teaspoon of baking soda, a cup of oil and the sugar that can be taken between two fingers (there are cooks who add the sugar at the end).
While the beans are boiling and softening, grind, strain and sauté the tomatoes in oil with four raw chili peppers, four roasted ones, the onions, all chopped into small pieces, the crushed garlic and the roasted cumin in a frying pan exposed to direct heat.
When the sofrito is ready and the beans have softened, mix them and add the salt.
Keep it on fire until it sets.
A few moments before turning it off, add the vinegar.
Let them sit for as long as possible.
