Ingredients
- ½ kg de black beans
- 1 cup of oil
- 12 tomatoes
- 8 chili peppers
- 2 onions
- 2 cloves of garlic
- 2 tablespoons of vinegar
- 1 bay leaf
- ½ teaspoon of roasted spices
- 1 teaspoon of baking soda
- 1 pinch of sugar
- salt to taste
Instructions
Bring the beans to a boil in a liter of water, with a bay leaf, a teaspoon of baking soda, a cup of oil, and a pinch of sugar (some cooks add the sugar at the end).
While the beans are boiling and softening, grind, strain, and sauté in oil the tomatoes with four raw peppers, four roasted ones, the onions, all chopped into small pieces, the crushed garlic, and the toasted cumin in a pan exposed to direct heat.
When the sofrito is ready and the beans have softened, mix them together and add salt.
Keep it on the heat until it sets.
A few moments before turning it off, add the vinegar.
Let them rest for as long as possible.
