Butifarras with onion, tomatoes, and peppers

Butifarra is a fresh sausage that is widely consumed in Catalonia, Aragón, Valencia, Murcia, and the Balearic Islands. It is a type of sausage made with pieces of ground pork, blood, and some spices. As for its cooking, there are many ways to prepare it; the most common is to accompany it with mushrooms, vegetables, rice, and you can grill it, cook it in a casserole, or bake it, whichever you prefer. Emigrants from these regions of Spain have spread it throughout Latin America and the Caribbean. Although it is becoming less common in Cuba, we had a "twisted version" of butifarra called "Fricandol" during the Special Period. Check out our recipe, and if you find fresh butifarra when you go to the market, be sure to prepare it.
Ingredients:
  • 8 fresh pork sausages
  • ½ green pepper
  • 1 roasted red pepper
  • ½ onion
  • 12 cherry tomatoes or 1 salad tomato cut into cubes
  • ¼ teaspoon of oregano
  • 1 tablespoon of olive oil
  • Oregano
Instructions:

In this recipe, I used little salt because butifarras are usually very seasoned sausages. Their flavor is intense and is balanced by the sweetness of the onion, cherry tomatoes, and sweet pepper.

Cut the onion and the bell pepper into julienne strips.

In a saucepan, heat the olive oil over low heat. Add the sausages, and when they start to brown and release juices, add the onion, cherry tomatoes, and chopped peppers.

Mix them and let cook over medium heat until the butifarras are done. The rest of the ingredients will remain very juicy and with a slightly crunchy touch. To finish, sprinkle a little oregano and serve hot, placing the butifarras on top of the vegetables.

It's a simple recipe that can be accompanied by white rice and a cold beer. The butifarra can also be cut into small pieces, turning it into an excellent skewer or appetizer.
