Butifarras with onions, tomatoes, and peppers

Butifarra is a fresh sausage that is widely consumed in Catalonia, Aragón, Valencia, Murcia, and the Balearic Islands. It consists of a type of sausage made from minced pork, blood, and various spices. As for its preparation, there are many ways to cook it; the most common is to serve it with mushrooms, vegetables, or rice. You can grill it, cook it in a pot, or bake it—whatever you prefer. Emigrants from these regions of Spain have introduced it to Latin America and the Caribbean. Although it has become less common in Cuba, we had a "twisted version" of butifarra called "Fricandol" during the Special Period. Check out our recipe, and if you find fresh butifarra at the market, be sure to prepare it.
Ingredients:
  • 8 fresh pork sausages
  • ½ green bell pepper
  • 1 roasted red pepper
  • ½ onion
  • 12 cherry tomatoes or 1 diced salad tomato
  • ¼ teaspoon of oregano
  • 1 tablespoon of olive oil
  • Oregano
Instructions:

In this recipe, I used a small amount of salt because butifarras tend to be heavily seasoned sausages. Their strong flavor is balanced by the sweetness of the onion, cherry tomatoes, and sweet pepper.

Slice the onion and pepper into thin strips.

In a saucepan, heat the olive oil over low heat. Add the sausages, and when they begin to brown and release their juices, incorporate the onions, cherry tomatoes, and the chopped peppers.

Mix them together and let them cook over medium heat until the sausages are done. The other ingredients will remain very juicy with a slightly crisp touch. To finish, sprinkle a little oregano on top and serve hot, placing the sausages over the vegetables.

It’s a simple recipe that can be served with white rice and a cold beer. The butifarra can also be cut into small pieces, turning it into an excellent appetizer or snack.
