Ingredients:
2 lbs of pork 3 tablespoons of sour orange juice 4 cloves of garlic Oregano Salt to taste 1 medium carrot 1 onion 1 leek 4 tablespoons of vegetable oil
Instructions:
Clean the pig from skin, fat, and bones, season with salt and part of the marinade made with sour orange, water, garlic, and toasted oregano, shape it into a roll and tie it tightly with twine, place the vegetables cut into thick julienne in a tray and put the pieces on top, drizzle the rest of the marinade, let it marinate for an hour. Place in the oven at approximately 190°C, with a little broth or water in the bottom of the tray, let cook for 1.5 hours. Remove from the oven, cool down, and portion. Serve with the cooking juices, accompanied by mashed potatoes or sautéed vegetables.
