- 1 pork rib
- 5 cloves of garlic
- Salt, pepper, cumin, paprika, and oregano to taste
- 1 sour orange
- 3 large potatoes
- Olive oil or sunflower oil
In a mortar, crush the garlic with a little salt, pepper, oregano, paprika, and cumin. Once a paste begins to form, add the juice of half a sour orange. Rub this mixture over the pork ribs and let them rest for at least two hours before baking.
Preheat the oven to 180ºC (356ºF)
Wash the potatoes and cut them into thick slices, about 1 cm thick. Grease the baking tray with oil and place the potato slices on it. Sprinkle with salt and pepper. Then, place the previously marinated pork ribs on top. Put it in the oven for about 25 to 30 minutes. Keep in mind that each oven has its own characteristics, and the cooking time will also depend on the quantity of ingredients used for this recipe.
Once the meat and potatoes are browned, let them rest for about 5 minutes in the turned-off oven before serving. Slice the ribs and serve them over the roasted potatoes. You can add some finely chopped chives for extra contrast on your plate.
