"Country Style" Pork Ribs

Country-style ribs are perhaps the meatiest cut when it comes to ribs. They are cut from the end of the pork loin or from the ribcage and are sold as individual portions. To prepare them, it's best to make a good rub; in this case, Chef Iván created a rather dry one, using a mix of herbs and spices. As you'll see in the video, the dry seasoning should be applied before grilling, and if possible, sear the meat to help the flavors meld. When flipping the ribs, use tongs as our chef does. This way, you prevent the juices from escaping, which can happen if you poke the meat with a fork. We hope you enjoy this recipe! Ingredients:
  • 2 kg of pork ribs
  • 2 tablespoons of cumin
  • 1 tablespoon of pepper
  • 2 tablespoons of paprika
  • 1 tablespoon of salt
  • 1 tablespoon of oregano
  • 2 tablespoons of dried parsley
  • Olive oil
  • ½ cup of broth or water
Instructions:

Place the meat in a deep, wide container. Gradually add all the herbs and spices mentioned in the recipe. Drizzle in some olive oil and mix, kneading the meat generously so that it absorbs these delightful flavors.

In a large skillet, gently heat a little oil. Before it reaches a high temperature, add all the ribs and let them cook for about 5 minutes.

After this time, turn them over and let them cook for another five minutes. Remove them and arrange them on the baking tray. Preheat the oven to 325°F (170°C).

Take advantage of the remaining fond in the pan by adding half a cup of water or broth. Add the resulting liquid to the meat you set aside in the tray. Cover everything with aluminum foil and bake for 1½ hours at 325°F (170°C).
