Ingredients:
2 tablespoons of butter or margarine 1 tablespoon of finely chopped onion 1 tablespoon of wheat flour 1 cup of chicken broth 1 medium ripe avocado, peeled and diced 1/2 teaspoon of lemon juice Salt to taste A pinch of lemon zest Freshly ground black pepper 2/3 cup of light cream
Instructions:
Melt the butter or margarine in a saucepan. Add the onion and sauté until soft but not browned. Stir in the flour and cook for 1 minute, then gradually add the broth and bring to a boil. Reduce the heat and simmer for 3 to 4 minutes. Add the avocado along with the lime juice and zest, salt, and pepper to taste. Let it simmer for another 5 minutes, then blend or puree the mixture. Return it to a clean saucepan, incorporating the light cream, and heat again until it comes to a boil. Adjust the seasoning and pour into bowls. Stir in some cream and sprinkle with chopped scallions. It can also be served cold.
