Ingredients:
2 tablespoons of butter or margarine 1 tablespoon of onion, finely chopped 1 tablespoon of wheat flour 1 cup of chicken broth 1 medium ripe avocado, peeled and diced 1/2 teaspoon of lemon juice salt to taste a pinch of lemon zest freshly ground black pepper 2/3 cup of light cream
Instructions:
Melt the butter or margarine in a saucepan. Add the onion and fry until soft, but not browned. Add the flour and cook for 1 minute, gradually adding the broth and bringing it to a boil. Simmer for 3 or 4 minutes. Add the avocado with the lime juice and zest, salt, and pepper to taste. Simmer for 5 minutes and then blend or puree. Return to a clean saucepan, incorporating the light cream, and heat again until it boils. Adjust the seasoning and pour into bowls. Stir in the cream and sprinkle with chopped green onions. It can also be served cold.
