Carrots are rich in vitamin A. This cream is an ideal food for those seeking a healthy and balanced diet.
Ingredients:
  • 2 large carrots
  • 1 medium onion
  • 1 teaspoon of salt
  • 4 cups of defatted broth
  • 1 cup of yogurt
  • 1 tablespoon of butter
  • Pepper to taste
Instructions:
We peel the carrots and cut them into rounds. In a saucepan, we heat the butter, add the crushed garlic, the chopped onion, and the carrot rounds. We let it sauté for about 3 minutes, stirring occasionally. Then, we cover it with broth and season with salt and pepper to taste. We cover it and let it cook until the carrots are tender. At this point, we remove it from the heat and allow it to cool for a few minutes. Next, we blend it until we achieve a smooth cream. Finally, we add the yogurt and blend again until well combined. Choose a bowl to serve this dish and you can garnish it with fried bread cubes and finely chopped parsley.
