Carrots are rich in vitamin A. This cream is an ideal food for people looking for a healthy and balanced diet.
Ingredients:
- 2 large carrots
- 1 medium onion
- 1 teaspoon of salt
- 4 cups of degreased broth
- 1 cup of yogurt
- 1 tablespoon of butter
- Pepper to taste
Instructions:
We peel the carrots and cut them into rounds. In a pot, we heat the butter, add the crushed garlic, the chopped onion, and the rounds of carrot. We let it sauté for about 3 minutes, stirring occasionally. Then we cover with broth and add salt and pepper to taste. We cover it and let it cook until the carrots are tender. At this point, we remove it from the heat and let it cool for a few minutes. Then we blend it until we obtain a fine cream. Finally, we add the yogurt and blend again until well integrated.
Select a bowl to present this dish and you can decorate it with fried bread cubes and finely chopped parsley.
