Note:
Coconut Candy is one of the most common desserts in Cuba. It is very easy to prepare. It can be enjoyed on its own, with different types of cheese, with cookies, with bread, or combined with other desserts. Additionally, it is a key ingredient in the making of some classic Cuban sweets such as Coconut Cake, Coconut Panetela, and Caramelized Coquito, among others. Coconut has many beneficial properties. It is rich in potassium, iron, and calcium. Every part of the coconut is used: the pulp, the water, the oil, not to mention its various applications in cosmetics, health, and other fields. Enjoy this simple and delicious recipe!
Ingredients:
  • 2 cups of shredded natural coconut or 150 grams of dried coconut
  • 2 cups of sugar
  • 2 cups of water
  • 1 pinch of salt
Instructions:

In a pot, place all the ingredients and mix them together.

They should be cooked over low heat for about 45 minutes, stirring continuously. If the coconut dough is fresh, it shouldn't be cooked for too long as it tends to become hard.

You can add cinnamon sticks or a teaspoon of vanilla during this cooking process, but it's optional.

Avoid letting the coconut candy dry out too much. To know when it's just right, you only need to stir it and see the bottom of the pot.

Pour it into a glass container and let it chill.

Serve it cold accompanied by cream cheese.
