A delicious sweet, perfect to accompany cheese and to finish Cuban meals. It is easy to make and requires very few ingredients, which might be why it is one of the most popular desserts on the Island. Ingredients:
- 2 lbs. of ripe papaya
- 1 lemon peel
- 1 stick of cinnamon
- 1 pound of sugar
- 2 cups of water
Instructions:
Wash the papaya well, peel it, and cut it into medium-sized cubes.
Put it in the pot with all the other ingredients. Cook it covered on low heat for 20 minutes. Check the syrup's consistency to see if it's to your liking.
If you want it to thicken more, leave the pot uncovered and keep the heat low.
To plate it, I recommend removing the pieces of cinnamon stick and the lemon peel, as they are unpleasant in the mouth. This dessert pairs wonderfully with a piece of white cheese or a generous tablespoon of cream cheese.
