A delicious sweet treat, perfect for pairing with cheese to round off Cuban meals. It's easy to make and requires very few ingredients, which might be why it ranks among the most popular desserts on the Island. Ingredients:
- 2 lbs. of ripe papaya
- 1 lemon peel
- 1 stick of cinnamon
- 1 pound of sugar
- 2 cups of water
Instructions:
Wash the papaya thoroughly, peel it, and cut it into medium-sized cubes.
Put it in the pot with all the other ingredients. Cook it covered on low heat for 20 minutes. Check the syrup to see if it suits your taste.
If you want it to thicken more, leave the pot uncovered and keep the heat low.
For plating, I recommend removing the pieces of cinnamon stick and the lemon peel, as they can be unpleasant to eat. This dessert pairs wonderfully with a slice of fresh white cheese or a generous tablespoon of cream cheese.
