Traditional cut dulce de leche

Note:
A simple and inexpensive treat. It's perfect for using milk that has curdled due to the Cuban heat, though we can also curdle fresh milk with lemon juice.
Ingredients:
  • 1 liter of whole milk
  • 1 ounce of lemon juice
  • 1 cup of brown sugar
  • 2 cinnamon sticks
  • 1 teaspoon of vanilla
  • 1 pinch of salt
Instructions:

Put the milk in a saucepan and add 1 ounce of lemon juice. Bring it to a boil with some pieces of lemon peel.

When the milk comes to a boil, the whey will separate and white lumps will form. Add the sugar, a pinch of salt, and the cinnamon. Let it boil and stir with moderate frequency. The more you stir, the more the lumps will break down, so it's best not to disturb it too much.

When it starts to dry and the syrup forms, you can remove it from the heat.

Remove the cinnamon sticks and lemon peels; they look nice in the photo as we did in this case, but they are not pleasant to taste.
