Note:
A delicious salad for afternoon snacks.
Ingredients:
- 2 cups of elbow macaroni
- ½ pickled cucumber
- ¼ cup of carrot
- 1 onion
- ½ pound of ham or another cold cut
- 2 hard-boiled eggs
- ¾ cups of mayonnaise
- 2 tablespoons of oil
- 1 tablespoon of vinegar
- 2 slices of pineapple
- 1 tablespoon of salt
- pepper to taste
Instructions:
Cook the elbow macaroni in boiling water with a little oil and salt. Drain and let it cool. Add the other chopped ingredients, except for the mayonnaise and hard-boiled eggs. Season with oil, vinegar, salt, and pepper, then mix in the mayonnaise. Finally, garnish the salad with the hard-boiled eggs sliced in half.
