- 2 medium potatoes
- 1 bunch of green beans
- 1 white onion
- 4 eggs
- 1 teaspoon of lemon juice or vinegar
- 3 tablespoons of oil (your choice of type)
- Salt, aromatic herbs, and pepper to taste
Wash the potatoes, peel them, cut them into cubes, and boil them in salted water.
Trim the ends off the green beans and discard them. Then cut the bunch into pieces of equal size, according to your preference. Rinse them under fresh water and drain well. When the potatoes are boiling, add the cut green beans to the same pot, cover it, and let them cook until the potatoes are tender and the green beans appear bright green. Remove from heat and drain everything using a colander.
In another pot, bring the eggs to a boil. They should boil for about 10 minutes. Remove them from the heat, run them under cold water, peel them, and set them aside.
Cut the onion into very thin julienne strips.
In a deep dish, place the beans and potatoes. Season them with oil and lemon, and adjust the salt to your liking. Then, add the hard-boiled eggs, cut in your preferred way. Top with finely chopped onion, and finally, sprinkle the dish with pepper and aromatic herbs of your choice.
Serve hot, and if possible, accompany it with olive oil so that each diner can add it to their taste.
