- 2 medium potatoes
- 1 bunch of green beans
- 1 white onion
- 4 eggs
- 1 teaspoon of lemon juice or vinegar
- 3 tablespoons of oil (of your preference)
- Salt, herbs, and pepper to taste
Wash the potatoes, peel them, cut them into cubes, and boil them in salted water.
Trim the ends of the green beans and discard them. Then cut the bunch into pieces of equal size, according to your preference. Wash them with fresh water and drain. When the potatoes are boiling, add the cut green beans to the same pot, cover, and let cook until the potatoes are tender and the green beans look bright green. Remove from heat and drain everything using a colander.
In another pot, bring the eggs to a boil. They should be boiling for about 10 minutes. Remove them from the heat, run them under cold water, peel them, and set them aside.
Slice the onion into very thin julienne strips.
In a deep dish, place the beans and potatoes. Season them with oil and lemon, adjusting the salt to taste. Then add the hard-boiled eggs cut in the way you prefer. Top it with finely chopped onion and finally sprinkle the dish with pepper and aromatic herbs of your choice.
Serve hot, and if possible, accompany it with olive oil so that each diner can add it to their liking.
