Bean Salad with Tomato and Onion

Bean salad is one of the most popular in Cuba. It can be combined with different ingredients and it always turns out great. The Habichuela is known in other places as Green Beans. It is considered a legume, but we consume it like a vegetable. It is believed that they originated in Central America and arrived in Europe in the 16th century. These beans are consumed green because when they mature they lose their nutritional value and only the fresh seeds are used. It is ideal to include in weight loss diets because they calm appetite and provide important nutrients, including folic acid. Look at our recipe, it is delicious, easy to make and very Cuban.
Ingredients:
  • 1 bunch of young beans
  • 1 white onion
  • 1 large salad tomato
  • 1 lemon
  • Sunflower or olive oil
  • Salt, pepper and aromatic herbs to your taste
Instructions:

Cut the ends of the beans and discard them. Then cut the mallet into pieces of equal size, as you like. Wash them with fresh water and drain them.

In a saucepan, bring salted water to a boil. When it is boiling, add the beans and let them cook until they turn a bright green color. Take them out of the hot water and rinse them with cold water to stop the cooking process and keep them al dente. Drain them and set them aside.

Cut the tomato into cubes and use all the juice for the salad. Also chop the onion into brunoise.

In a deep bowl, mix the ingredients and add the lemon juice. Season with salt and pepper and add some aromatic herb of your choice, for example, basil or rosemary.
