- 1 bunch of young beans
- 1 white onion
- 1 large salad tomato
- 1 lemon
- Sunflower or olive oil
- Salt, pepper and aromatic herbs to your taste
Cut the ends of the beans and discard them. Then cut the mallet into pieces of equal size, as you like. Wash them with fresh water and drain them.
In a saucepan, bring salted water to a boil. When it is boiling, add the beans and let them cook until they turn a bright green color. Take them out of the hot water and rinse them with cold water to stop the cooking process and keep them al dente. Drain them and set them aside.
Cut the tomato into cubes and use all the juice for the salad. Also chop the onion into brunoise.
In a deep bowl, mix the ingredients and add the lemon juice. Season with salt and pepper and add some aromatic herb of your choice, for example, basil or rosemary.
Serve fresh. It will add color, vitamins, minerals and a Cuban flavor to your table. Enjoy your meal!!
