Eating raw vegetables like carrots is beneficial for our bodies. Carrots are high in potassium, phosphorus, and vitamin A, making them highly recommended for cases of vision loss and for the prevention of such conditions. Today, we present a delicious and easy-to-make salad recipe that combines the sweetness of carrots with the intense flavor of black olives and capers. Some people use these types of raw salads as a side dish for meats or fish, but you can also enjoy it on its own as a fresh and nutritious appetizer.
Ingredients:
  • 1 large carrot
  • 1 salad tomato
  • 100 grams of black olives
  • 50 grams of capers
  • 1 tablespoon of vinegar
  • 3 tablespoons of olive oil or sunflower oil
  • Salt to taste
Instructions:

Wash the carrot and the tomato. Grate the carrot into a deep container. Cut the tomato into cubes and add it to the carrot. Add the black olives, which can be whole or halved. Then, add the well-drained capers. Mix everything together. If you like, you can include other ingredients of your choice, such as finely chopped onion or sweet peppers.

Prepare the vinaigrette in a small bowl. In this case, use 3 tablespoons of oil, 1 tablespoon of vinegar, and a pinch of salt. Mix well with a small spoon and drizzle it over the salad.
