Beans are a very popular dish in Cuba. They are cooked about two or three times a week. Each cook has their little book, especially with this recipe for Red Beans. But, in general, everyone agrees on the use of a couple of mandatory ingredients, malanga and pumpkin. Check out our chef's proposal and let us know what you think if you make it.
Ingredients:
  • 1 pound of beans
  • 2 smoked pork knuckles
  • 2 onions diced
  • 3 bay leaves
  • 1 tablespoon of cumin
  • 2 chorizos
  • 1 piece of bacon
  • 1 bunch of cilantro
  • 1 malanga
  • 1 piece of pumpkin
  • 2 tablespoons of oil
Instructions:

Soak the beans for about 4 hours. Then soften them with the pork knuckles in the pressure cooker for 25 minutes or until the grain splits open.

In the pot, heat the oil and fry the bacon cut into cubes. Then add the chorizo, also cut. Once they release their fat, add the onion, and when it becomes translucent, add the bell pepper.

Let it cook for about 5 minutes, stirring frequently. Add the bay leaves, the soft pork knuckles, previously deboned, and the beans.

According to the thickness, add more or less bean broth. Cook everything covered for 20 minutes and add the previously washed and diced vegetables. Finish by adding the cilantro to release its aroma.

Before serving, remove the cilantro and bay leaves. Serve them with white rice.
