Ingredients:
- 1 pound of red beans
- 4 cups of water
- ¼ teaspoon of cumin
- 1 sour orange
- ½ pound of pork ground meat
- 2 cloves of garlic
- 1 ½ tablespoons of salt
- ¼ teaspoon of ground pepper
- ¼ teaspoon of oregano
- ½ cup of oil
- 1 large onion
- 1 cup of tomato puree
- 2 bell peppers
- 1 bay leaf
Instructions:
Soak the beans for about 2 hours, then cook them in a pressure cooker for 45 minutes. Cut the pork into 5 cm pieces.
Mash the garlic cloves with salt, pepper, oregano, and cumin. Add the sour orange juice and marinate the pork.
Heat the oil and sauté the chopped onion and pepper. Add the marinated meat and let it brown, stirring continuously. Then, incorporate the tomato puree, peppers, and dry wine, cooking everything for about 3 minutes. Mix the sauté and meat with the softened beans. Stir well and let it simmer until it thickens to your liking.
