- 4 green bananas
- 1 onion cut into brunoise
- ¼ cup of lard or vegetable oil
- 3 or more cloves of garlic
- ¼ teaspoon of pepper
- ½ tablespoon of salt
- 3 cups of water
- juice of a lemon
Wash and peel the bananas. Cut them into medium pieces and boil them with a splash of lemon. Add salt to your liking. When the bananas are soft, keep them in the hot water until it's time to prepare the fufú.
In a pan, heat the fat. Add the garlic and the onion chopped into brunoise. When the onion becomes translucent, add the previously drained bananas. Let them cook over the heat, stirring for a few minutes.
Remove the pan from the heat and mash everything together, trying to integrate all the elements well. If you notice it's too dry or hard, add a bit of the water from the cooking of the bananas until it reaches your desired consistency. Adjust the salt to taste and add pepper if you like.
This dish can be made using chicharrones, fried bacon, or fried pork chunks, which will give it a spectacular flavor. It is also a good side dish for a beef stew.
