Italian-style Liver is a very common recipe in Cuban cuisine. It is one of those dishes we have adopted as our own, but its name evokes other regions, much like the Uruguayan Steak. Italian-style Liver is a delicious and easy-to-make dish. It is also economical and can be prepared with beef liver, pork liver, or even chicken liver. Enjoy your meal!

Ingredients

  • 500 gramos de beef liver
  • 1 onion
  • 1 green bell pepper
  • 1 red pepper
  • 4 cloves of garlic
  • ½ cup of dry wine
  • ¼ cup of apple cider vinegar
  • 2 tablespoons of soy sauce (optional)
  • 2 tablespoons of lemon juice (optional)
  • 2 bay leaves
  • Salt and pepper to taste
  • Spicy to taste

Instructions

Cut the liver into strips approximately 2 to 3 cm wide. Season it with salt and pepper, add lemon juice, and set aside.

In a pan, sauté the garlic and then add the liver. Stir continuously to ensure it browns evenly. When it starts to brown, add the bell peppers and onion sliced into strips. Mix the ingredients well, adjust the salt to taste, and add spice as desired. Pour in the dry wine, cover it, and let it cook until it reaches your preferred doneness.

Some people add a little milk to keep the liver tender. But it's up to their choice.

Serve it with white rice and fried plantains, or tostones.
