- 2 or 4 eggs
- 2 tablespoons of oil
- 200 grams of ham
- ½ onion
- 2 cloves of garlic
- ½ cup of tomato sauce
- Salt and pepper to taste
Cut the ham into small cubes and the onion into brunoise. Crush the garlic.
In a skillet, heat the oil over low heat. Add the onion and garlic; when they are golden, add the ham and let it sauté for 3 minutes. Stir frequently to ensure even browning. Incorporate the tomato sauce and allow it to cook for 3 minutes.
Preheat the oven to 200ºC.
Serve the ham and the sofrito on the plates. Add 1 or 2 eggs to each plate according to your preference. Season with salt and pepper, and bake them for 6 to 8 minutes, depending on how you like your eggs. In this case, they were in the oven for about 12 minutes to achieve well-cooked yolks.
Remove them from the oven and serve immediately. Remind the diners that this type of dish retains heat for a long time, so they should be cautious to avoid burning themselves on the serving dish.
