Ingredients:
1 piglet weighing 25 to 30 pounds 2 heads of crushed garlic 2 tablespoons of oregano 10 bay leaves Approximately 8 tablespoons of salt 1 tablespoon of white pepper 6 sour oranges
Instructions:
Clean the pig and place it on a large roasting pan. Season it with the following marinade: Mash the garlic with the pepper, salt, and oregano, and once it has a puree-like consistency, add the juice of the sour oranges. Rub the pig with this marinade. Cook it in a hot oven for two hours, until the meat is cooked through and the skin is nicely browned. Be sure to turn it occasionally and baste it with the marinade from time to time.
