Ingredients:
1 piglet weighing 25 to 30 pounds 2 heads of crushed garlic 2 tablespoons of oregano 10 bay leaves approximately 8 tablespoons of salt 1 tablespoon of white pepper 6 sour oranges
Instructions:
The piglet is cleaned and placed on a large baking dish. Season it with the following marinade: Crush the garlic with the pepper, salt, and oregano, and when everything is like a puree, add the juice of the sour oranges. Rub the piglet with this marinade. Cook it in a hot oven for two hours, until the meat looks cooked and the skin is well toasted. Care must be taken to turn it and add the marinade from time to time.
