Shredded pork loin, roasted in a casserole

Use:
A delicious recipe for roast pork in a casserole. It is easy to make and the result is spectacular!!
Ingredients:
  • 1 kg pork loin, clean of fat
  • 8 cloves of garlic finely chopped
  • 1 sour orange
  • 1 tablespoon complete seasoning
  • 1 teaspoon bay leaf powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • ½ cup olive oil
  • 1 cup of dry wine
Instructions:

Season the pork loin with salt and pepper. Mix two tablespoons of olive oil with the bay leaf, cumin and all seasoning. With this mixture, bathe the pork loin well. Add the sour orange juice and let it rest. Ideally, it should rest overnight in the refrigerator, but you can also do it as in this video, right away.

Before roasting the meat, pierce the pork loin with the tip of a knife and insert pieces of garlic and seasonings into these small holes. Although we do not include it in the ingredients of this recipe, you can also add olives, chopped onion and pepper.

Put olive oil in the saucepan over high heat and brown the pork loin on each side. Add the cup of dry wine, lower the heat and cover to cook at medium heat for about 20 minutes. Check it so it doesn't dry out and turn it over so it absorbs the flavors from all sides. If you notice that it is dry, add more dry wine and lower the heat a little more.

When the meat is ready, cut it into slices and add the juice or sauce that remains in the casserole.

Accompany it with white rice, black beans, fried plantains and a delicious vegetable salad.
