Pancakes always remind us of grandma, or Sunday afternoons, or your dad's face when you asked him for 2 pesos to go buy them at the candy store on the corner. The muffins are a truly homemade dessert. During the Special Period, there was a proliferation of those that, for lack of a pretty mold, were made in soda cans cut in half. Did you eat them? Try our recipe now and create a new memory!!
Ingredients:
  • 2/3 cup butter
  • 5 eggs
  • 1 1/2 cups white sugar
  • 1 1/3 cups wheat flour
  • 1 teaspoon royal powder
  • 1 teaspoon lemon zest
  • 1 tablespoon aged rum
Instructions:
Melt the butter and let it cool to room temperature. Turn oven on to 350ºF. Grease muffin or muffin molds with butter. Separate the whites from the yolks. Beat the yolks, gradually adding the sugar until they are very thick. Add the melted butter, then the egg whites beaten until stiff and, finally, the flour sifted with the Royal. Wrap everything gently, without beating it. Add the lemon zest and rum. Pour the mixture into the molds, filling them only 2/3 full. Bake them for about 25 minutes. Let them cool and serve sprinkled with sugar.
