Ingredients:
- 2/3 cup of butter
- 5 eggs
- 1 1/2 cups white sugar
- 1 1/3 cups of wheat flour
- 1 teaspoon of baking powder
- 1 teaspoon of lemon zest
- 1 tablespoon of aged rum
Instructions:
Melt the butter and let it cool to room temperature. Preheat the oven to 350ºF. Grease muffin or cupcake molds with butter. Separate the egg whites from the yolks. Beat the yolks, gradually adding the sugar until they are thick. Add the melted butter, then the beaten egg whites, and finally the sifted flour with the baking powder. Gently fold everything together, without beating it. Add the lemon zest and the rum. Pour the mixture into the molds, filling them only up to 2/3 full. Bake for about 25 minutes. Let them cool and serve them dusted with sugar.
