The potato is a tuber belonging to the nightshade family. It is believed that there are more than 5,000 varieties, and they are native to the Andes. A potato is made up of 80% water. In addition, it has a high starch content, minerals such as potassium, and vitamins from groups A, B, and C. Cubans consume a lot of potatoes whenever possible, and we have a wide variety of recipes that include them. On this occasion, we present a healthy and economical way to prepare them; they will make an ideal side dish for meats, fish, or even with a good fried egg.
Ingredients:
  • 5 medium potatoes
  • 1 onion
  • ¼ teaspoon of oregano
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
Instructions:

Wash the potatoes and, if you wish, peel them, although they can also be eaten with their skin, especially varieties with thin skins. Cut them into slices of about 2 cm.

Place them on the baking tray previously greased with olive oil or on parchment paper. In the second case, brush the potatoes with a little oil on top. Sprinkle salt, pepper, and oregano to taste. Add the onion sliced into rings and place in the oven.

They should be cooked for approximately 25 minutes at a temperature of 200ºC. The time may vary depending on the thickness of the potato slices and the characteristics of each oven. When they acquire a golden color, poke them with a fork to check if they are ready.
