- 4 medium potatoes
- 2 tablespoons of olive oil or butter
- Salt, pepper, and oregano
Wash the potatoes very well, if possible scrub them with a brush to remove all the dirt or residues they may have, because we will cook them with their skin.
For these potatoes, I recommend the cut known as "papas chascadas." Chascar means to insert the blade of the knife into the potato and tear off a piece. It is a cut used to release the starch better during cooking.
Place the clean potato pieces in a deep microwave-safe container. Add the oil and the dry ingredients. Mix well so that the potatoes are coated with these seasonings.
Cover the container with plastic wrap and make a few holes in it with the tip of the knife. Cook for 10 minutes at maximum power in your microwave.
Please note that the cooking time may vary depending on the amount of potatoes you are cooking. You can check the doneness from time to time.
Once the potatoes are roasted, remove them from the microwave, uncover them, and add a little finely chopped parsley or chives to make the presentation even more appetizing.
You can accompany it with the cream of your choice, and it is an excellent side dish for both meats and fish.
