- 4 medium potatoes
- 2 tablespoons of olive oil or butter
- Salt, pepper, and oregano
Wash the potatoes very well, and if possible, scrub them with a brush to remove any dirt or residue, as we will be cooking them with their skin.
For these potatoes, I recommend the cut known as "chascadas." Chascar means to insert the edge of the knife into the potato and tear off a piece. This cut is used to help the starch release better during cooking.
Place the clean potato chunks in a deep, microwave-safe bowl. Add the oil and the dry ingredients. Mix well to ensure the potatoes are coated with the seasonings.
Cover the container with plastic wrap and make a few holes in it with the tip of a knife. Cook on high power for 10 minutes in your microwave.
Please note that the cooking time may vary depending on the quantity of potatoes you are preparing. You can check the doneness periodically.
Once the potatoes are cooked, remove them from the microwave, uncover them, and add a little finely chopped parsley or chives to make the presentation even more appealing.
You can pair it with your preferred cream, and it makes an excellent side dish for both meats and fish.
