Ingredients:
  • 3 large potatoes
  • 3 sausages
  • 1 small onion
  • ½ green bell pepper
  • 1 ½ cups of water
  • ½ cup of tomato sauce
  • 2 tablespoons of oil
  • Salt, pepper, and oregano to taste
Instructions:

Wash, peel, and cut the potatoes into pieces. Slice the chorizo into rounds. Cut the onion and bell pepper into julienne strips.

In a hot pan, heat the oil. Add the chorizo and lightly fry it. Then, add the onion, tomato sauce, and pepper, stirring to combine well. Incorporate the potatoes. Sauté for about 5 minutes, stirring occasionally.

Cover this preparation with water, place a lid on it, and let it cook over medium heat until the broth reduces and the potatoes are cooked to perfection.

Before finishing, check the salt level. Some people do not add salt to this recipe because the chorizo tends to have a very strong flavor.

This dish is served hot. To present it, I recommend sprinkling a bit of oregano and adding a drizzle of olive oil.
