- 3 large potatoes
- 3 chorizos
- 1 small onion
- ½ green pepper
- 1 ½ cup of water
- ½ cup of tomato sauce
- 2 tablespoons of oil
- Salt, pepper, and oregano to taste
Wash, peel, and cut the potatoes into pieces. Slice the chorizo into rounds. Cut the onion and pepper into julienne.
In a hot pot, heat the oil. Add the chorizo and lightly fry it. Add the onion, tomato sauce, and bell pepper, stirring to combine well. Incorporate the potatoes. Sauté for about 5 minutes, stirring occasionally.
Cover this preparation with water, cover it, and let it cook over medium heat until the broth reduces and the potatoes are tender.
Before finishing, check the salt level. Some people do not add salt to this recipe because chorizo tends to have a very intense flavor.
This dish is served hot. To present it, I recommend sprinkling a little oregano and adding a drizzle of olive oil.
