The recipe for fried fish has a few tricks. The first is to clean the fish very well. The bones retain heat and can interfere with the cooking process. This means you'll need to use more heat than necessary, which runs the risk of leaving the fish undercooked or gelatinous on the inside. The second trick is to marinate the fish the night before and add a little lemon juice—just a bit, as too much can make it overly acidic and unpleasant.
Ingredients:
  • 1 whole, clean fish
  • 1 lemon
  • 5 cloves of garlic
  • 1 cup of oil
  • Salt and pepper to taste
Instructions:

Clean the fish and gently pat it dry. Make three diagonal cuts on the skin on each side. Season with salt and pepper to taste, and rub the crushed garlic cloves over it. Add the lemon juice. Let it marinate for at least two hours before frying.

To fry the whole fish, use medium heat. High heat will only burn the outside. Let each side of the fish fry for about 3 minutes, then turn it over to cook the other side. Repeat the process until you achieve the golden color to your liking.

Let it rest for a couple of minutes on absorbent paper to remove any excess fat.

Fried fish pairs wonderfully with homemade mayonnaise, which has a rich garlic flavor. You can also dress it up with a good Cuban mojo.
