- 1 whole, clean fish
- 1 lemon
- 5 cloves of garlic
- 1 cup of oil
- Salt and pepper to taste
Clean the fish and pat dry. Make three diagonal cuts in the skin on each side. Add salt and pepper to your taste and rub the crushed garlic cloves. Add the lemon juice. Let it sit for at least two hours before frying.
To fry whole fish use medium heat. An intense fire will only burn the exterior. Let each side of the fish fry for about 3 minutes and turn it over to cook the other side. Repeat the operation until you achieve the golden tone of your liking.
Let it sit for a couple of minutes on absorbent paper to remove excess grease.
The fried fish combines very well with homemade mayonnaise sauce, with an intense garlic flavor. You can also season it with a good Cuban mojo.
