- 1 dogfish
- 1 onion
- 3 cloves of garlic
- 1 lemon
- Salt, pepper, and oregano to taste
- 3 tablespoons of olive oil
Wash the fish, remove the entrails, and scale it thoroughly. Make three or four crosswise cuts in the skin on each side to allow the marinade to penetrate the flesh.
Season it to your liking and let it marinate with the seasoning for at least two hours.
Slice part of the onion into thin rings and set it aside to garnish the fish at the end of the preparation.
Preheat the oven to 200ºC.
To prepare the fish marinade, combine the lemon juice, finely crushed garlic, a bit of oregano, and the remaining onion chopped into small dice. Mix the ingredients together and apply this marinade to both sides of the fish.
Place the marinated fish in the baking tray previously greased with olive oil. You can add slices of potato at the bottom, but remember to season them with salt and pepper.
If you want the fish to remain juicy, it's advisable to bake it first with the tray covered in aluminum foil. Cook it for 20 minutes at a temperature of 200ºC. After this time, uncover it and leave it in the oven for an additional 10 minutes so that the skin turns golden and becomes crispy.
Always check the cooking point, as the times will depend on the weight of the fish and the specific characteristics of each oven.
Serve this dish hot and garnish it with the thin onion rings you set aside for this preparation. You can also add a Cuban mojo to give it a special touch.
