Havana-style Picadillo on a Rustic Tray

Picadillo a la habanera, as its name suggests, is a dish that originated in Havana. Its ingredients come from all over the world, but the blend that creates this delicious flavor was born in the capital. Chef Ivan presents his Picadillo a la habanera as part of a quintessentially Cuban combination called Bandeja Campesina. This dish features small plates that are common on our tables, including white rice, black beans, chicharrones, plantains, and a fried egg. Ingredients:
  • 500 grams of ground beef
  • 50 ml of olive oil
  • 100 grams of white onion
  • 75 grams of olives
  • 30 grams of capers
  • 30 grams of raisins
  • 2 potatoes diced and fried
  • 1 tablespoon of cumin
  • ½ tablespoon of oregano
  • 115 grams of red pepper
  • 115 grams of green pepper
  • 3 cloves of garlic
  • 100 ml of dry wine
  • 150 grams of tomato sauce
  • Sal y pimienta al gusto
Instructions:

In a skillet, heat the olive oil. Add the diced onion. Once it starts to brown, add the bell pepper cut into small cubes. Crush the garlic and let this sauté cook for a few minutes over medium heat.

Add the seasoned ground meat and stir well to incorporate the flavors. Cook for about 10 minutes, stirring continuously to prevent sticking and ensure everything is evenly mixed. Add the dry wine, chopped olives, raisins, diced potatoes, and capers. Stir again and then add the tomato sauce.

Let it cook for about 10 minutes over medium heat. If you notice that it's drying out, you can add more dry wine or a little water. Every chef has their own approach, but this is a juicy dish, so be careful that it doesn't dry out while ensuring that it doesn't end up too liquidy either.

The chef recommends pairing it with white rice, black beans, cracklings, plantains, and a fried egg. We hope you enjoy this rustic platter.
