- 3 large sweet peppers
- 1 ½ cups of ground beef (you can substitute it with any other ground meat)
- 1 large onion
- 3 cloves of garlic, finely smashed
- 1 cup of grated or finely chopped carrot
- 1 lemon
- 4 tablespoons of finely chopped celery
- 6 tablespoons of fried tomato (optional)
- Shredded cheese
- Oil
- Salt and pepper to taste
Wash the peppers and dry them. Make a clean cut at the top to create a lid. Set it aside. Then, hollow out the inside of the pepper, removing both the seeds and the white parts. Brush the pepper with oil and set them aside.
Preheat the oven to 180ºC (356ºF).
Season the ground meat to your taste and add the juice of half a lemon. Include the well-mashed garlic. Wash the vegetables and grate the carrot. Chop the celery finely and dice the onion into small brunoise. If you like, you can also add the fried tomato. Mix all these ingredients thoroughly and use the mixture to fill the peppers.
Place the peppers on the baking tray. Make sure they are stable. If you notice any that might tip over, make a shallow cut at the base for support. Avoid them sticking to each other. Put them in the oven at the previously mentioned temperature for 20 minutes.
Remove them, add the cheese, and place the lids that you had set aside. Let them sit at the same temperature for another 20 minutes. However, since each oven has its own characteristics, be sure to keep an eye on them to prevent overcooking.
Serve them hot. They can be enjoyed on their own, alongside white rice, mashed root vegetables, or a salad of your choice. Enjoy!
