- 4 portions of chicken
- 1 sour orange or lemon
- salt, cumin, and pepper to taste
- 5 cloves of garlic
- 1 onion
- 1 cup of frying oil
Season the chicken with salt and pepper. Add the sour orange juice, crushed garlic (rub it in), and cumin. It is best to let it marinate for at least two hours before frying it.
In a deep pan, put the oil. Add the chicken with the warmed oil. Keep the heat at medium temperature, let the chicken cook, and turn it occasionally to ensure it browns evenly. To check if it is cooked, pierce it and see that no juice or blood comes out. When it is almost done, increase the heat and give it a quick burst of heat so it finishes browning and becomes crispy.
To make the criollo mojo, put a little oil, crushed garlic, and sliced onions in another pan. Cook over medium heat, stirring, and when the onion starts to become translucent, add a little sour orange juice. Let it cook for a couple more minutes and pour it over the chicken. Serve hot and enjoy!!
