Peas are legumes that are widely consumed in Cuba. They have been cultivated for thousands of years in Asia and Europe. They are also known as green peas, garden peas, or petit pois. They were used by Gregor Mendel in his studies of genetics and have a wide variety of uses in professional cooking. Almost nobody in the world consumes them the Cuban way, which is why today we bring you this recipe from a chef inspired by French cuisine. If you make it at home, share a photo with us.
Ingredients:
  • 1 pound of peas
  • 1 onion diced
  • 2 tablespoons of butter
  • 5 cachucha peppers cut into thin strips
  • 1 red bell pepper
  • Salt and pepper to taste
  • 1 chorizo
  • 150 grams of smoked pork ribs
Instructions:

Soak the peas, just with water, in the pressure cooker or pot, to your liking. Once they are ready, blend them, strain them, and set them aside.

In a saucepan, heat a bit of butter and before it browns, add the onion. Add the peppers, garlic, and salt and pepper to taste.

Add the smoked pork ribs and the chopped chorizo. Stir well and let it cook over medium heat. Then add the beaten peas, mix well, and let it cook covered for 5 minutes.

Accompany it with bread, white rice, or other products of your preference.
