- 200 grams of ground ham
- 200 grams of minced pork
- œ red bell pepper
- 1 onion
- 2 cloves of garlic

- 8 pineapple slices
- œ cup of brown sugar
- œ cup of pineapple juice or syrup from canned pineapples.

- 2 teaspoons of butter
For the sauce:
Mix the minced pork and the ground ham. Season with salt and pepper to your liking.
Crush the onion, pepper, and garlic. Add it all to the meat and set it aside in the refrigerator for about half an hour.
After allowing the meat to absorb the flavors of the spices, shape it into flattened meatballs and alternate them with the pineapple rings, starting and ending with meat. Try to make the meat and pineapple rings of similar size so that they stay that way while baking, resulting in a nice dish.
Preferably choose an elongated mold to bake the Ham and Pineapple Roll. Grease the bottom with butter and preheat the oven to 180ÂșC (350ÂșF).
Bake it for 30 minutes. For the first 15 minutes, keep the temperature at 180ÂșC. Then increase the heat to 220ÂșC until the baking time is complete. During this period, lightly baste the meat roll with its own juices to prevent the top from drying out. When it is ready, turn off the oven and let the meat rest until serving time.
For the sauce:
In a saucepan, add the sugar, pineapple juice, and lemon juice. Stir and place it over medium heat until it comes to a boil. Lower the heat and let it form a syrup at the thread stage. This will be when an uninterrupted thread of syrup forms when you lift the spoon.
Then add the butter and mustard, stir well until combined, and remove it from the heat. Serve this sauce over the ham and pineapple roll when presenting the dish.
