- 200 grams of ground ham
- 200 grams of ground pork
- ½ red bell pepper
- 1 onion
- 2 cloves of garlic
- Salt and pepper to taste
- 8 pineapple slices
- ½ cup of brown sugar
- ½ cup of pineapple juice or syrup from canned pineapples, if using
- 1 ounce of lemon juice
- 2 teaspoons of mustard
- 2 teaspoons of butter
For the sauce:
Mix the ground pork and the minced ham. Season with salt and pepper to taste.
Chop the onion, bell pepper, and garlic. Add everything to the meat and let it rest in the refrigerator for about half an hour.
After allowing the meat to absorb the flavors of the seasonings, shape it into flat meatballs and arrange them alternately with the pineapple rings, starting and ending with the meat. Try to make the pieces of meat and the pineapple rings a similar size so that they hold together while baking, resulting in a beautiful dish.
Preferably choose a long baking pan for the Ham and Pineapple Roll. Grease the bottom with butter and preheat the oven to 180ºC (350ºF).
Bake it for 30 minutes. For the first 15 minutes, keep the temperature at 180ºC. Then increase the heat to 220ºC for the remainder of the baking time. During this period, lightly baste the meat roll with its own juices to prevent the top from drying out. Once it's done, turn off the oven and let the meat rest until it's time to serve.
For the sauce:
In a saucepan, add the sugar, pineapple juice, and lemon juice. Stir and place it over medium heat until it reaches a boil. Lower the heat and allow it to form a syrup with a thread consistency. This will occur when lifting the spoon creates an uninterrupted thread of syrup.
Then add the butter and mustard, stirring well until they are fully combined, and remove it from the heat. Serve this sauce over the ham and pineapple roll when presenting the dish.
