Ingredients for the hash
- 500 g of ground beef
- 1 onion
- 3 garlic cloves
- 2 tablespoons of oil
- Salt, pepper, cumin and oregano to taste

- ½ cup tomato sauce
Ingredients for mashed potatoes
- 8 papas
- 1 bay leaf
- 2 butter spoons
- 1 teaspoon salt
- 1 cup grated cheese (optional)
Wash and peel the potatoes. Put them in a saucepan cut into medium pieces and cover them with water. Add the salt and bay leaf and let it cook until the potatoes are soft.
Season the ground beef for the mince and set it aside.
In another cauldron, heat the oil. Add the well crushed garlic, the onion cut into brunoise and pepper if you like it. Mix well and when the onion begins to turn translucent add the ground beef.
Integrate all the ingredients well and finish seasoning with a little cumin and oregano. Add the olives, which usually add a salty touch, and then adjust the salt level.
When the meat has lost its juice, add the tomato sauce, a pinch of sugar and let it cook for a few more minutes until it has the density you like.
The minced meat should not be too juicy, otherwise it may affect the plating and destroy the potato drum.
Drain the potatoes, remove the bay leaf and prepare a puree. Add the butter, gradually integrating it with the heat of the potatoes as you prepare the puree. You can use blender sticks.
It should be a firm puree. You can add pepper if you like.
To assemble the Potato Drum, first place a base of puree. Try to make all the layers even and of similar thickness.
On the base of mashed potatoes you have the option of placing a layer of cheese. Then put a thick layer of minced meat and to finish with a layer of mashed potatoes.
Cover it with grated cheese and if you wish you can put it in the oven to brown it or simply cover it and let the cheese melt with the heat of the puree.
If you assemble the drum quickly, the heat of the mashed potatoes will be enough. But if you prefer you can put it in the oven for 10 minutes at 180ºC. This recipe is served hot and is a main dish.
