Cassava with Mojo

Yuca with Mojo is one of the most traditional dishes in Cuban cuisine. We usually eat it as a side dish, although many people enjoy it as an appetizer. Yuca, also known as cassava, is a root vegetable native to the tropical regions of the Americas. It is an economically significant crop and its consumption has spread worldwide. There are countless dishes featuring yuca, but most Cubans undoubtedly choose Yuca with Mojo.

Ingredients

  • 2 libras de cassava
  • 4 cloves of garlic
  • 1 lime or bitter orange
  • Oil
  • Salt to taste

Instructions

Peel the cassava and cut it into pieces, then heat the water and bring the cassava to a boil.

After boiling for about 10 minutes, drain the water and add cold water. You can repeat the process until the cassava begins to soften. Finally, add the salt and let it finish softening.

In a pan, heat the oil until it is hot. Then add the crushed garlic and the juice of the sour orange or lemon.

Other variations: you can add pork cracklings or fried pork with onions in the mojo.
