Cassava is a tuber native to the tropical areas of America. It is one of the few pre-Columbian crops from our island and is deeply rooted in our culinary tradition. Cubans have various recipes featuring cassava that we've inherited from our ancestors, but perhaps the favorite is Yuca con Mojo. However, the next day, with the leftover cassava, we prepare another delight: fried cassava. Ingredients:
  • 2 cassavas
  • frying oil
  • The word "sal" translates to "salt" in English
  • sugar
Instructions:

Wash the yucas, cut them into medium pieces, peel them, and boil them in salted water until they become tender.

Drain the soft yucas, remove the hard center stalk, and cut it into pieces of similar thickness.

In a pot, heat the oil. Once it's hot, add the yucca and fry until they achieve a golden color. Do this in batches to prevent them from sticking together and getting damaged.

Place them on absorbent paper to let them drain the excess grease. Then continue frying the rest.

For the presentation, it can serve two purposes, and they are two different dishes.

If you dust them with sugar, you’ll have a sweet garnish. On the other hand, if you use salt, you can add a mojo or a light vinaigrette, and you’ll end up with a completely different flavor. Some people also pair it with more elaborate sauces, but that’s up to your preference. Enjoy your meal!
