Ingredients:
2 lb. of cassava
1 tsp. of salt
1 tbsp. of butter or oil
1/2 lb. of ground beef
3 tbsp. of oil
1 small onion
2 cloves of garlic
3 small peppers
1 egg
1/2 cup of tomato puree
1 tsp. of salt
1 tsp. of vinegar
2 tbsp. of dry wine
1 cup of crushed cookies
Instructions:
Peel the cassava and boil it until it softens. While the cassava is cooking, make the filling. Prepare the sofrito with oil, onion, garlic, bell peppers, and tomato. Add ground meat, salt, vinegar, and dry wine. When the cassava is soft, remove it from the heat. Pass it through a grinding machine or mash it with a mortar, remembering to remove the fiber from the center of the cassava. Season the cassava puree with salt and butter or oil. Take portions of the mashed cassava and fill them with the filling, shaping them as you prefer. Beat the egg. Dip the shaped cassava in the egg and then in the ground crackers. Then fry them in hot oil until golden brown.
