- 2 red-tailed hawks
- 1 chopped onion
- 3 cloves of garlic

Clean the fish and make two small crosswise cuts on each side to help the seasonings penetrate the flesh better. Season with salt and pepper to taste. Rub with crushed garlic and sprinkle with lemon juice. Let it rest for half an hour and preheat the oven to 170 ºC.
Peel and slice the potatoes into rounds. Grease the baking tray with olive oil. Arrange the potato slices and the julienned onion on the tray. Sprinkle with salt to taste. Place the fish on top of this bed. Bake in the oven for 20 minutes.
Remember that each oven has its own characteristics, and it's important to monitor cooking times; otherwise, your fish will be dry. Whenever you check the doneness of the fish, baste it with its own juices. This will enhance the flavor and keep the flesh juicy.
