- 1 pork rib
- 5 cloves of garlic
- Salt, pepper, cumin, paprika, and oregano to taste.
- 1 sour orange
- 3 large potatoes
- Olive oil or sunflower oil
In a mortar, crush the garlic with a bit of salt, pepper, oregano, paprika, and cumin. When a paste begins to form, add the juice of half a bitter orange. Rub this mixture over the pork ribs and let it rest for at least two hours before baking them.
Preheat the oven to 180ºC (356ºF)
Wash the potatoes and cut them into thick slices about 1 cm thick. Grease the baking tray with oil and place the potato slices on it. Sprinkle them with salt and pepper. Then place the previously marinated pork ribs on top. Put it in the oven for about 25 to 30 minutes. Remember that every oven has specific characteristics and that the cooking time will also depend on the quantity of ingredients you use for this recipe.
When the meat and potatoes have browned, let them rest for about 5 minutes in the turned-off oven before bringing them to the table. Cut the ribs and serve them over the roasted potatoes. You can add a bit of finely chopped chives to provide more contrast to your dish.
