Carrot and Black Olive Salad

Eating raw vegetables like carrots is beneficial for our body. Carrots are rich in potassium, phosphorus, and vitamin A. For this reason, they are highly recommended in cases of loss of visual sharpness and for the prevention of diseases of this type. On this occasion, we present a delicious and very easy salad recipe, where we combine the sweetness of carrots with the intense flavor of black olives and capers. Some people use this type of raw salad to accompany meats or fish, but you can also eat it alone as a fresh and nutritious starter.
Ingredients:
  • 1 large carrot
  • 1 salad tomato
  • 100 grams of black olives
  • 50 grams of capers
  • 1 tablespoon of vinegar
  • 3 tablespoons of olive oil or sunflower oil
  • Salt to taste
Instructions:

Wash the carrot and the tomato. Grate the carrot into a deep bowl. Cut the tomato into cubes and add it to the carrot. Add the black olives, whole or halved. Then, add the well-drained capers. Mix everything together. If you like, you can add other ingredients of your choice, for example, finely chopped onion or sweet peppers.

Prepare the dressing in a small glass. In this case, 3 tablespoons of oil, 1 tablespoon of vinegar, and a pinch of salt. Mix well with a small spoon and add it over the salad.
