Bean Salad with Tomato and Onion

Green bean salad is one of the most popular dishes in Cuba. It can be combined with various ingredients and always turns out delicious. Green beans, known in other regions as snap beans, are considered a legume, but we consume them as a vegetable. They are believed to be native to Central America and made their way to Europe in the 16th century. These pods are eaten while they are still green because they lose their nutritional value as they mature, and only the fresh seeds are utilized. They are ideal for weight loss diets as they help curb appetite while providing important nutrients, including folic acid. Check out our recipe; it's tasty, easy to make, and very Cuban.
Ingredients:
  • 1 bunch of green beans
  • 1 white onion
  • 1 large salad tomato
  • 1 lemon
  • Sunflower oil or olive oil
  • Salt, pepper, and herbs to taste
Instructions:

Trim the ends of the green beans and discard them. Then, cut the bundle into equal-sized pieces, to your liking. Wash them with fresh water and drain.

In a pot, bring salted water to a boil. Once it's boiling, add the green beans and cook them until they reach a bright green color. Remove them from the hot water and rinse them with cold water to stop the cooking process and keep them al dente. Drain and set aside.

Cut the tomato into dice and use all the juice for the salad. Also, chop the onion finely.

In a deep bowl, mix the ingredients and dress them with lemon juice. Season with salt and pepper, and add any aromatic herb you prefer, such as basil or rosemary.
