The potato is a tuber that belongs to the nightshade family. It is believed that there are more than 5,000 varieties, originally from the Andes. A potato is made up of 80% water. Additionally, it is high in starch, contains minerals such as potassium, and is rich in vitamins A, B, and C. We Cubans consume a lot of potatoes when we can, and we have a wide variety of recipes that include them. This time, we present a healthy and economical way to prepare them, which will make them an ideal side dish for meats, fish, or even with a good fried egg.
Ingredients
- 5 medium potatoes
- 1 onion
- ¼ teaspoon of oregano
- Salt and pepper to taste
- 2 cucharadas de olive oil
Instructions
Wash the potatoes and, if desired, peel them, although they can also be eaten with their skin, especially thin-skinned varieties. Cut them into slices about 2 cm thick.
Place them on a baking tray previously brushed with olive oil or on parchment paper. In the latter case, drizzle a little oil over the potatoes. Sprinkle with salt, pepper, and oregano to taste. Add the onion, sliced into rings, and put it in the oven.
They should be cooked for approximately 25 minutes at a temperature of 200ºC. The time may vary depending on the thickness of the potato slices and the characteristics of each oven. When they turn golden brown, poke them with a fork to check if they are ready.
Serve them hot; you can add a drizzle of olive oil when presenting this side dish. I hope you enjoy it.
