Oven-roasted potatoes

The potato is a tuber that belongs to the nightshade family. It is believed that there are over 5,000 varieties, originating from the Andes. A potato is composed of 80% water. Additionally, it is high in starch, contains minerals such as potassium, and provides vitamins from groups A, B, and C. In Cuba, we consume a lot of potatoes when we can, and we have a wide variety of recipes that include them. This time, we present a healthy and budget-friendly way to prepare them, making them an ideal side dish for meats, fish, or even served with a good fried egg.
Ingredients:
  • 5 medium potatoes
  • 1 onion
  • ¼ teaspoon of oregano
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
Instructions:

Wash the potatoes and, if you wish, peel them, although they can also be enjoyed with their skin, especially varieties with thin skin. Cut them into slices about 2 cm thick.

Place them on a baking tray previously greased with olive oil or on parchment paper. In the second case, brush the potatoes with a bit of oil on top. Sprinkle with salt, pepper, and oregano to taste. Add the onion sliced into rings and place in the oven.

They should be cooked for about 25 minutes at a temperature of 200ºC. The time may vary depending on the thickness of the potato slices and the characteristics of each oven. When they turn golden, pierce them with a fork to check if they are ready.
